Vegan Oil-Free German Potato Salad

This vegan oil-free German potato salad is a light and tangy potato salad that is tasty as a side dish or a meal. It’s great to share at potlucks!

Vegan Oil-Free German Potato Salad

I have to start by saying that I have never been much of a fan of potato salad.  Especially not the kind with mayonnaise.

My grandma used to make her potato salad with more of a vinegar type dressing and I could eat that. Didn’t love it…but I could eat it.

Over the years I’ve had some potato salads that people said were made the German way…and I thought they were pretty good. They had a vinegar dressing, but dang! It’s made with bacon AND the grease that cooks out of the bacon. My arteries are slamming shut just thinking about it. So I started messing around and came up with something with a similar taste, but without the fat and bacon. Using smoked paprika gives a hint of that smokey bacon-y flavor. You could also add some of your favorite vegan bacon. I make mine with tempeh or mushrooms. Try it!

And I have to say…I really like this potato salad.

Prepare to swoon…this vegan dark chocolate and peanut butter pudding is rich and chocolatey. The peanut butter layer takes it over the top.

Sometimes you just need a little chocolate.

And for me, chocolate can only be improved by adding peanut butter. I mean, that’s the only thing that I like in my chocolate. No fruit flavors, please.

So, before I started eating a vegan diet, I made chocolate pudding with milk and butter and sometimes egg yolks. Luckily, I was able to adapt the recipe I used by replacing the cow’s milk with almond milk and eliminating the butter and eggs altogether.

What makes this one so good to me is that it’s so fast to make in my Instant Pot and it comes out perfectly every time and the clean up is easy. I’m really happy when I make a batch of the cashew cream a day or so before so that I don’t even have to clean the blender on the day that I make the stroganoff.

This has been popular at all the potlucks that I’ve taken it to and great as a one-dish meal. You can’t go wrong with this tasty quinoa salad!

Isn’t quinoa a funny little grain?  (Well, I’ve been told it’s not a grain…it’s a seed.)

Either way, it’s a tasty and cute little grain-like food that can replace rice in most recipes. It packs quite a nutritional punch too! It is 15% protein and it is one of the few plant foods that is a complete protein.

Why Are You Here?|Your Mom’s Vegan

Why are you here? I don’t mean that in a questioning your existence sort of way. I mean here, as in on a vegan blog written by middle aged vegan mom.

Maybe your mom’s not vegan. Maybe you want to be and need to have someone like a mom that you can go to with questions.

Are you vegan, but maybe a junk food vegan and you’re hoping to start eating a more whole food…real food…diet?

Have you heard a bit about Dr. McDougall’s way of eating that is high in starch, low in fat that excludes oils and most processed foods? Are you interested in learning how to cook and eat this way daily?

Maybe you want to lose weight. Maybe you want to reverse a lifestyle type of disease like high blood pressure, high cholesterol, diabetes, heart problems, arthritis, MS, Lupus, colitis, Crohn’s, etc.

Maybe you are vegan just for the animals and you’re just looking for some support with the food side of things because you need to stay healthy too.

That’s why I’m here. That’s why I started this blog. I want to help people do what I have done by learning to cook food that is tasty and good for our bodies. I’ll be your vegan mom. Or daughter. Or friend.

So tell me what you need. And I’ll try to point you to recipes (mine and other vegan bloggers), articles that explain the science behind this way of eating and anything else that will help you achieve your health-related goals.

I’m a big fan of peanut butter. I can eat it straight out of the jar. Unfortunately, I had to quit doing that when I decided to get serious about cutting back on the fats in my diet. I still eat it, but in much smaller quantities and less often.

I missed it in a lot of things so I decided to try the peanut powders that are out there now. You’ve probably heard of them. PB2 is one brand. It has added sugar and salt. 125 mg of salt in two tablespoons, so keep that in mind if you are watching your salt intake.

Hoosier Hill Farm has a peanut butter powder that is just peanuts and I like it best. I can decide to add my own sweetener depending on the recipe.
