Vegan Kale and Quinoa Beet Salad

August 2, 2018 by Trish Hall Leave a Comment

This vegan kale and quinoa beet salad is a meal in one bowl. Or a beautiful side dish that will impress everyone at your next potluck.

Vegan Kale and Quinoa Beet Salad

We’re finally getting some warm weather here on the Central Coast of California! It’s rare that we actually get… summery weather ..in the summer…. so while it lasts I get to avoid my oven and make lots of salads.

The beauty of salads is that you can have so many of your favorite veggies and grains all in one bowl.

Isn’t it weird how some people can’t stand beets?

Vegan Mushroom Stroganoff for the Instant Pot

July 31, 2018 by Trish Hall 7 Comments

A creamy, hearty vegan mushroom stroganoff for the Instant Pot that will have everyone coming back for more!

Vegan Mushroom Stroganoff for the Instant Pot

Who doesn’t like a creamy pasta dish?

What makes this one so good to me is that it’s so fast to make in my Instant Pot and it comes out perfectly every time and the clean up is easy. I’m really happy when I make a batch of the cashew cream a day or so before so that I don’t even have to clean the blender on the day that I make the stroganoff.

Corn and Black Bean Quinoa Salad

July 31, 2018 by Trish Hall 4 Comments

This has been popular at all the potlucks that I’ve taken it to and great as a one-dish meal. You can’t go wrong with this tasty quinoa salad!

Quinoa Salad

Isn’t quinoa a funny little grain?  (Well, I’ve been told it’s not a grain…it’s a seed.)

Either way, it’s a tasty and cute little grain-like food that can replace rice in most recipes. It packs quite a nutritional punch too! It is 15% protein and it is one of the few plant foods that is a complete protein.

Overnight Oats with Sweet Potato Peanut Butter

July 27, 2018 by Trish Hall 5 Comments

These overnight oats with sweet potato peanut butter are a healthy, “fast food” breakfast!

Overnight Oats with Sweet Potato Peanut Butter

I’m a big fan of peanut butter. I can eat it straight out of the jar. Unfortunately, I had to quit doing that when I decided to get serious about cutting back on the fats in my diet. I still eat it, but in much smaller quantities and less often.

I missed it in a lot of things so I decided to try the peanut powders that are out there now. You’ve probably heard of them. PB2 is one brand. It has added sugar and salt. 125 mg of salt in two tablespoons, so keep that in mind if you are watching your salt intake.

Hoosier Hill Farm has a peanut butter powder that is just peanuts and I like it best. I can decide to add my own sweetener depending on the recipe.

Vegan Not-Tuna Salad

Vegan Not-Tuna Salad|Your Mom’s Vegan

Doesn’t that look delicious? And it is so reminiscent of tuna salad, I bet that you could pull this sandwich out of your lunch bag at work and people would think you are eating a tuna sandwich.

Except…no stinky tuna. And no fat laden mayonnaise.

There are many recipes for a tuna salad replacement for vegans. Just google vegan tuna salad and you’ll see bunches of them. Many of them use vegan mayonnaise though, so that didn’t work for me and my oil-free way of eating.

My search was over when I found this recipe on one of my favorite vegan blogger’s page. I liked his recipe so much that I asked to post it on my blog and he liked my photo so much he asked to use it on his blog. I love it when sharing happens! The link below will take you to the recipe. I’m a little scared to send you over there because his site is so awesome you might forget to come back. Please come back!
